Bean Soup

The other morning at 3:00 am I awoke to the most amazing aroma.  It was my slow cooker cooking bean soup.  The previous day I soaked a variety of dried legumes  and added them to my trusty Crock Pot that night.    A big thank you to the inventor of the Crock Pot.  I love adding foods in the evening and waking up the next day to a fully cooked meal.  This one was particularly easy. I simply added the soaked beans, one small sliced onion, a dash or two of dried Italian Seasonings, sliced baby carrots, a smidgen of garlic and a carton of low sodium chicken broth.  Yummy and healthy  according to the Mayo Clinic  . The only thing missing was the cornbread which I intended to make but never got around to.  Oh well, next time ;)

I love fiber crafts. I started knitting in 2000 and spinning in 2003.I love spinning on a wheel and a drop spindle. I have a fiber shop on Etsy that features my handspun yarns and Luscious Ditty batts. I have recently added weaving and photography to my agenda. I moved to Alabama in 1992. I live in Alabama but my heart belongs to Kentucky. I have just recently acquired an interest in weaving and love it. Let's see where that takes us.
